olive oil is not one-size-fits-all, play with food and oil matches like you do with wine
substitute olive oil 1 to 1 for other oils
to substitute olive oil for butter use 80% olive oil [for example, instead of 10 Tbs of butter use 8 Tbs of olive oil]
olive oil harmonizes with other flavors and it exalts the flavors of foods just like salt does, try olive oil instead of salt or with less salt
if you find an oil too spicy or bitter on a salad, try it on a steak, on beans (humus!) or on a pizza, or use it for a pasta sauce, to sauté greens or to make scrambled eggs
