olive oil is not one size fits all, play with food and oil matches like you do with wine

  

if you find an oil too spicy or bitter on a salad, try it on a steak, on beans (humus!) or on a pizza, or use it to sauté greens or onions or to fry an egg

to substitute olive oil in recipes that call for butter use 80% olive oil ..instead of 10 Tbs butter you can use 8 Tbs olive oil 

  

substitute olive oil 1 to 1 for other oils

  

olive oil harmonizes with other flavors and it exalts the flavors of foods just like salt does, try olive oil with no salt or less salt
