Tuscan field blend: moraiolo, frantoio, leccino, pendolino...

from a traditional field blend of Tuscan olive varieties like moraiolo, frantoio, leccino and pendolina. The classic bitterness of a Tuscan olive oil is balanced by an earthy spiciness .. it's grassy and peppery.

this single variety olive oil from pendolino olives is fresh, nutty and  delicatly spicy. From our first day of harvest on 16 October 2024 we got this limited run of 176 bottles.

Sicilian single-variety nocellara del Belice  

from the nocellara del Belice olives that are prevelant in and native to the northwest corner of the island ofSicily. These olives were picked early for a bold and spicy olive oil, the bitterness is light to invisible so the oil seems rounder in the mouth and the overall impression is fruity and spicy.

Tuscan field blend: morcone, frantoio, moraiolo... 

from our groves at Impruneta which have a large quantity of ancient Morcone olive trees. Morcone olives are fleshy and juicy and made a really nice oil but only if they're cared for during the year and picked on the early side. We did both those things and the resulting oil is a classic Tuscan blend, a bit more elegant than our Piero blend.

No. 055 harvest 24 October 2024

delicate Tuscan blend: morcone, frantoio, moraiolo... 

we got rained out on 24 October after just a morning of picking, the oil we made that day is a very delicate Tuscan blend with subtle grassy and peppery characteristics. It's perfect for all-purpose cooking hence the bag-in-box format which is also a sustainable choice .. it weighs less so it costs less to ship and since the bag remains oxygen-free as you use it your oil stays fresher longer.  

Martini olives 

 rescue olives harvest 2024

tiny Tuscan olives from our rescue grove in Tuscany, we are recovering this grove so pruned the trees drastically, hence hardly any olives. The olives we did pick were brined in a salamoia / salt water solution from October through Easter. The salamoia is perfect for making a dirty martini. The olives themselves are small and they have pits, so not necessarily a picture perfect martini olive but they do taste good so you know, give us a hand with the recovery of the rescue grove and get a jar or two.
