juice from a couple of lemons
anchovies
parmigiano cheese, grated

Let the anchovies soften in lemon juice. Peel the garlic and chop it into big chunks and then smash it with the blade of the knife to make a paste. Use the back of a fork to gently break up the anchovies in the lemon juice, add the smashed garlic, black pepper, and abundant, grated parmigiano cheese. Stir it all together and then add the olive oil in a thin stream while whisking with a fork to make a thick dressing. Coat crisp romaine lettuce, escarole or whichever greens you like for a super flavorful and also healthy salad.​​
